Bhjarwa Baingan: Typical Maharashtrian delicacy
Typical Maharashtrian delicacy of Bharli wangi or Stuffed Brinjal or Bhjarwa Baingan. How to cook? Here is a step by step guide
Recipe : 6- 8 small brinjals prefer pink ones. Wash clean, make 4 slits. Remove the crown but retain half the stalk. Keep it in water.
Stuffing : One half grated coconut. Three to four tsp of red chilli powder, 6-8 hot green chillies, one tsp haldi powder,4-5 tp of goda masala ( without this the dish cant proceed ahead), 4-6 tbs of coarse ground roasted groundnut, one tsp salt. Blend this in a mixer to a semi fine to coarse paste using very less water.
Remove each brinjal from water and stuff it well in its crevise. Retain the balance stuffing. Heat oil in kadai. Coat the kadai vey well with hot oil. To this hot oil add 10-12 fresh curry leaves. When done add the balance masala to the aromated oil and stir well till oil floats on the sides.

Add in the brinjals slowly. Add sufficient water to cover the brinjals. Cover and cook till done. In between turn the brinjals so that they cook on all sides.You can have this with chapati, rice & dal.Enjoy!
